On Thursday August 10, Consuming Nature participant Shelby Brewster served smog meringues at the GASP (Group Against Smog and Pollution) Air Fair, held at the Assemble Community Art Space in Garfield. Inspired by the GASP collections held at the University Library System Archives Service Center, and her research into the Center for Genomic Gastronomy, Shelby’s culinary performance explored how taste experiences can expose invisible environmental pollutants in new ways.
